Description
This is a recipe for a classic rich, sweet almond cake. It is a cake that is similar to an almond-flavored pound cake, and is rich and buttery with a deep almond flavor. The cake is hard to stay away from: it’s sophisticated enough to serve for dessert with pureed raspberries or sliced fresh strawberries, plums, or nectarines, but it’s difficult not to nibble on it throughout the day if you leave it on the counter. One taste and you’ll be hooked no matter what your heritage.
Ingredients
- 1 1⁄4 c sugar
- 1 egg
- 1 1⁄2 t almond extract
- 2⁄3 c milk
- 1 1⁄4 c flour
- 1⁄2 t baking powder
- 8 T melted margarine
Instructions
Beat sugar, egg, almond extract and milk together well. Add flour, baking powder and margarine and mix until it is well blended. Spray pan with cooking spray. Bake 350 degrees
40 - 60 minutes, check for doneness. Edges must be golden brown. Cool before removing.
Sprinkle with confectionery sugar.

This cake freezes very well.
