Description
This gingerbread cake recipe is fragrant with the flavors of molasses and spice. It's a perfect cake for surprising guests or for that special after dinner treat. Bake and freeze up to two months ahead, then frost on the day you plan to serve. Unwrap before thawing so excess moisture can evaporate.
Ingredients
- 2 T butter, melted
- 2⁄3 c packed brown sugar
- 2 egg whites
- 1⁄4 c low fat plain yogurt
- 2 c flour
- 1 1⁄2 t baking soda
- 1 1⁄2 t ground ginger
- 1 t cinnamon
- 1⁄2 T salt
- 1 c brewed coffee
- 1⁄2 c molasses
- 1⁄3 c unsweetened applesauce
- 1 c chopped dried fruit
Instructions
Cooking Instructions:
Preheat oven to 350 degrees
Coat 9 x 9 pan with cooking spray.
In large bowl: butter, sugar, egg, yogurt In medium bowl: flour, baking soda, ginger, cinnamon, salt In small bowl: coffee, molasses, applesauce
Alternate adding flour and coffee mixtures to butter mixture. Stir well, but do not over mix (will be lumpy) fold in fruit.
Pour in pan. Bake 40 minutes-Cool.
Serve with whipped topping if desired
